Pasta And Broccoli

Ingredients

1b Penne or your Favorite pasta
1 Head of Broccoli cut into Florets (see note )
2 Tablespoons Fresh Chopped Garlic 1/4 Cup Extra Virgin Olive Oil
1/2 Cup Romano or Parmigiano Cheese
Directions

Fill a medium size stock pot with warm water. Place on stove at high temperature until water has reached a boil, add 2 table-spoons of salt to water. First add broccoli florets for approximately 5 minutes or until tender remove from water with a strainer leaving the water in the pot and putting the broccoli on the side (Don't worry if there is a little broccoli left over its all flavor). After removing broccoli add your pasta and cook till A1 Dente, While your pasta is cooking put a large saucier pan on the stove and add your garlic and oil. Begin to brown the garlic over medium high heat when the garlic is golden brown slowly add 1/2 cup of your hot water to the pan to stop the garlic from burning (If you like add a teaspoon of crushed red pepper to the garlic as its browns for a little extra zing!). Finally when the pasta is done add it to pan along with the broccoli florets that are already cooked toss them in the sauce adding the cheese at the last moment. The last step is to Enjoy!

Pasta And Beans (Pasta Fagioli)
This is a home recipe a little different form the Large version But just as good!
Ingredients

2 large onions, 5 ribs of celery, 2 carrots (all Put through food processor until finely chooped or chop by hand for a more rustic feel.)
1 Tbsp. Chopped Fresh Garlic.
1Tsp. Crushed Red Pepper
1/2 Cup Extra Virgin Olive Oil
3/4 lb Applewood Smoke Bacon (Finely Chopped)
1/2 lb Italian Sausage Cooked (Finely Chopped)
2 16oz Cans Great Northern Beans (Rinsed and Drained)
1 16oz Can San Marzan Whole Peeled Tomatoes (Hand Crushed)
Salt and pepper as Needed
1lb pasta yur choice Farfalle and Ditalini are recommended
Romano and parmigiana cheeses for serving

Start By Sauteing your vegetable in a large stock pot until they reduce by about 1/3 volume adding the olive oil Crushed red pepper and garlic right t the end. In a Seperate saute pan cook bacon until crisp then add to the stock pot with approximately half of the grease from the pan. add the sausage and tomatoes to the pot and return to a simmer. Then add 4 cups of water to the pot and the great northern beans. turn up to a boil then reduce to a simmer and cook for 30 minutes. In a seperate pot Boil salted water and cook pasta to al dente. when pasta is finished add to the pot and return to a boil. Add a little parmigiana to the pot then serve along with Romano Cheese and Bread. Enjoy!
